Wash all the vegetables thoroughly

Dice the onions finely. Chop the potato and beans into bite-sized pieces.

Drain away the liquid from the chickpeas and red kidney beans. Wash with water and set aside.

In a large pot, add oil and begin to fry the red onions untl golden brown and aromatic.

Add in the celery and green beans (or mixed vegetables). Cook for 15 minutes until the vegetables have softened.

Add in the potato, pureed tomatoes, vegetable stock liquid (either stock cube or homemade liquid), kidney beans and chickpeas. Mix well.

Bring to a boil for 30 minutes, then reduce to low heat and simmer for 1 hour until the soup has thickened.

Season with salt, pepper and herbs.
